Tasty, warm and filling Chicken Cordon Blue recipe. Serve with baked new potatoes or fries and a crisp salad. Ingredients: 2 whole chicken breasts Directions: 1. Remove skin from chicken breasts and discard. Between two pieces of wax paper, flatten breasts with a wooden mallet until quite thin. 2. Cut each breast into two pieces crosswise. Season to taste with salt and pepper. 3. Lay a slice of cheese and a slice of ham on each piece of breast and roll. 5. Melt butter in a flat baking dish with mushrooms and sherry and bake at 350 degrees covered for 35 minutes. 6. Uncover and bake an additional 25 minutes. |
