Pineapple Dessert FonduePreparation time: 5 minutes. Cooking time: 10 minutes. Microwave version. Serves: 6. 1 can (8 oz.) crushed pineapple 1 can (6 oz.) apple juice Grated peel & juice from 1 orange 1/4 c. honey 2 tbsp. cornstarch 1/4 c. water 2 tbsp. brandy or fruit liqueur 1 angel food cake (8 oz.) 1. In a 1-quart microwave measure, combine crushed pineapple, apple juice, grated orange peel, orange juice and honey. 2. Microwave on HIGH (100%) power for 4 to 5 minutes or until liquid comes to a boil. 3. Combine cornstarch and water. Stir into fruit mixture. 4. Microwave on HIGH (100%) power for 2 minutes or until mixture boils, thickens and becomes translucent. Stir in brandy or liqueur. 5. To serve, pour sauce into a fondue dish. Place over a warmer. 6. Cut angel cake into even cubes. Serve cubes with long-handled forks to dip into pineapple mixture. |
